Potatoes Au Gratin
5 pounds Red Potatoes, washed, sliced (less than 1/8 in thick)
2 to 4 cups or more of ½ Medium Cheddar and Monterey Jack Cheese
1 to 2 whole sliced and then chopped Sweet Onion
1 to 2 cups of Heavy Cream
Garlic Salt and Pepper to taste

Preheat oven to 375 degrees. Spray the bottom and sides of a large baking pan with olive oil spray. Layer potatoes, onions and cheese 3 to 4 times, depending on the depth of your pan. Pour in the cream as soon and as you can see it coming up under the potatoes, stop. If you can't see it coming up under the potatoes, then add more. Top it off with cheese, garlic salt and pepper. 

Bake in oven for approximately 45 minutes to 1 hour. You can check to see if it is done by putting a fork into the middle of the pan, just like you were checking a baked potato. If it slides in easily, then you know it is done. If it needs more time and the top is getting too brown, then put some foil on the top. Let set for at least 20 minutes, then devour!
