Cream of Potato Soup

Potato Soup2 lbs. of organic Red Potatoes
1 whole Sweet Onion,
    chopped
1 bunch Fresh Parsley, minced
3 stalks Celery
2 cloves Garlic, minced
5 pieces of Bacon, cooked and
    chopped
8 cups organic Chicken Broth
    (2 boxes), or make your
    own—enough just to cover
    all ingredients.
Garlic Salt & Pepper to taste
2 teaspoons Maple Syrup, (optional)
1/8 cup Cream
1 cup Cheddar Cheese
 
In large soup pot place onion, garlic, parsley, celery, potatoes and bacon.  Just barely cover these ingredients with organic chicken broth and simmer on medium until potatoes are falling apart. Turn off heat and add rest of ingredients.  Blend well with hand blender, or food processer.  You may need to warm up the soup. Yummy!
