Hash Brown Potato Pancakes

1 bag of organic hash brown potatoes
3 eggs
1 tablespoon oat flour
1 tablespoon vegenaise mayo
Garlic salt & pepper to taste
Onions and garlic, optional
3 to 4 tablespoons coconut oil
 
Pre-heat coconut oil in a large fry pan with the heat on high. 

In a bowl, stir all ingredients together; make sure the hash browns are not frozen.  If you need your mixture to be a little stiffer, add more oat flour.  With your hands form a patty, then gently lay the patties into the hot coconut oil.  Turn your heat down to medium.  Fry well on one side before turning.  Make sure you brown the patty well on both sides, Yum!
