12 large corn tortillas
Refried black beans
Chicken, cooked and shredded
Sharp cheddar cheese, or cheese of your choice
¼ cup (or more) Coconut oil

Lay tortillas out on a work surface.  Moisten or spray with coconut oil to keep them from breaking up.

Place about 2 tablespoons of the beans, chicken, and cheese, or filling of your choice, in a line along the bottom 1/3 edge of the tortilla.  The secret is not to make them too thick.  Tightly roll the tortilla into a cylinder, and secure the ends with one or two toothpicks. Repeat with the remaining tortillas. 

Next, heat a large fry pan with coconut oil.  Heat until very hot.  Place flautas into hot oil and fry one side, then turn and fry other side.  You want them crispy and yummy. Drain the flautas on a paper towel-lined plate. Discard toothpicks.

Dip them into homemade salsa and guacamole—enjoy!
